1/2 teaspoon liquid hickory smoke.

Directions: follow directions on pea prep cleaning then Pre Soak 1 Lb peas for at least 5 hours in 8 cups water.
Drain off water but retain about 1-2 cups of water for flavor enhancing. Put peas in crock pot on high and add back 6 cups of water.
Chop bacon into cubes about 1/2-1 inch and fry until brown and crispy. Put bacon on paper towel to soak up excess grease and add to pot. Place two whole bay leaves in pot. Stir in all remaining ingredients. Slow cook peas on high stirring at least once an hour. After about 2 hours on high, remove the bay leaves. Continue to season to personal taste, stirring once an hour. Total crock pot time should be at least 5-6 hours.

Yeah. Thanks guys. I have been struggling to find my mom’s original recipe in her writings. In 2021, I tried to make some from scratch and it was a disaster.
This year, I dug deep into my mom’s recipe books and found several different recipes but none of them were exactly how she made it. So I extracted the ingredients I KNEW she used and then delved into southern recipes dating back many years.
This was the result. I got a thumbs up from my whole family so I guess this one is going to be my new foundation to build upon.
